Food Hygiene Training

Employees who handle or prepare food, whether open (unwrapped) or packaged foods are required to be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities.  The requirement does not apply to all people involved in a food business.

The level and amount of training will depend on the job of the individual and the type of food that they handle.  People who handle open high risk foods, such as cooked meats, will require more advanced training than someone who handles low risk foods such as wrapped sweets and crisps.  It is not always necessary for all staff to undergo formal training; it may be sufficient in some instances for supervision and instruction to be given by a more senior member of staff.

The Level 2 Award in Food Safety is aimed at those people who handle or prepare open foods.  The course is designed to teach students how to prepare and supply food that is safe and will not cause illness to consumers.  The course can be aimed specifically at caterers, retailers or manufacturers.  Course content is as follows:

  • Legislation
  • Food Safety Hazards
  • Temperature Control
  • Refrigeration, chilling and cold holding
  • Cooking, hot holding and reheating
  • Food handling
  • Principles of safe storage
  • Cleaning
  • Food premises and equipment

The course ends with a short multiple-choice examination and successful candidates will receive a Level 2 Award Certificate issued by the Chartered Institute of Environmental Health.  The course normally lasts for one full day, or two half days.

Those persons responsible for developing and maintaining procedures based on the HACCP principles should also receive adequate training in their application. 

The Level 3 Award in Implementing Food Safety Management Procedures provides an overview of the policies, controls and procedures of HACCP principles/systems.  Course content is as follows:

  • 12 steps in the HACCP process
  • Controls required to ensure food safety
  • Use of a management tool such as the SFBB pack

Level 3 (Intermediate)  and Level 4 (Advanced) training courses are also available, these are aimed at supervisors and managers within food businesses.  They cover food hygiene in more detail and focus on management and systems.
